Optimizing mung bean and soybean hydrolysis for the generation of bioactive peptides of potential functional food applications

This study investigates the enzymatic hydrolysis of soybean (Glycine max L.) and mung bean (Vigna radiata) proteins using bromelain, ficin, papain, and pepsin to improve digestibility and functional properties. We hypothesized that mung bean's less compact structure would yield higher degree of hydrolysis (DH) and bioactive peptides compared to soybean, enhancing antioxidant capacity for functional foods. Mung bean showed significantly higher proteolysis, with a maximum DH of 46.5 ± 2.1 % (p ≤ 0.05) using 10 % bromelain for 12 h, versus soybean's 26.9 ± 1.5 % (p ≤ 0.05). Bromelain and ficin outperformed papain and pepsin, producing up to 62.3 ± 3.2 % oligopeptides and 32.4 g/100 g free amino acids in mung bean. Mung bean hydrolysates exhibited superior antioxidant activity, reaching 78.4 ± 2.5 % DPPH scavenging (p ≤ 0.05), compared to soybean's 58.9 ± 2.0 % (p ≤ 0.05), due to increased 200–1000 Da peptides. Optimal conditions (10 % enzyme, 12 h) improved solubility and bioactivity, highlighting mung bean's potential and bromelain's efficacy for sustainable food applications, warranting further protease research.

A Novel Approach to Swell Mitigation: Machine-Learning-Powered Optimal Unit Weight and Stress Prediction in Expansive Soils

Expansive soils pose significant challenges to structural integrity, primarily due to volumetric changes that can lead to detrimental consequences and substantial economic losses. This study delves into the intricate dynamics of expansive soils through loaded swelling pressure experiments conducted under diverse conditions, encompassing variations in the sand content, initial dry unit weight, and initial degree of saturation. The findings underscore the pronounced influence of these factors on soil swelling. To address these challenges, a novel method leveraging machine learning prediction models is introduced, offering an efficient and cost-effective framework to mitigate potential hazards associated with expansive soils. Employing advanced algorithms such as decision tree regression (DTR), random forest regression (RFR), gradient boosting regression (GBR), extreme gradient boosting (XGBoost), support vector regression (SVR), and artificial neural networks (ANN) in the Python software 3.11 environment, this study aims to predict the optimal applied stress and dry unit weight required for soil swelling mitigation. Results reveal that XGBoost and ANN stand out for their precision and superior metrics. While both performed well, ANN demonstrated exceptional consistency across training and testing phases, making it the preferred choice. In the tested dataset, ANN achieved the highest R-squared values (0.9917 and 0.9954), lowest RMSE (7.92 and 0.086), and lowest MAE (5.872 and 0.0488) for predicting optimal applied stress and dry unit weight, respectively.

Tourism-Oriented Spatial Analysis of Tangible Cultural Heritage in Bukhara (Uzbekistan)

This study examines the spatial distribution and tourism utilization of 829 officially registered architectural heritage sites in the Bukhara, Uzbekistan. Spatial analysis methods including the Gini Index (0.569), Lorenz Curve, Nearest Neighbor Analysis, Kernel Density Estimation, and Bivariate Moran’s I were applied to examine clustering patterns and disparities across districts. The findings reveal unequal heritage distribution: over 50% of the sites are located in two districts, mainly in the eastern region, while others remain underrepresented. The Bukhara city shows strong clustering, whereas several districts exhibit random or dispersed patterns. Despite a sharp rise in tourist arrivals from 13,300 international visitors in 2020 to over 1.7 million in 2024 only 146 sites (17.6%) are actively used for tourism. This increased tourism pressure, with visitors per site growing from 1,798 to 39,351. Typological analysis showed uneven spatial patterns among major religious, administrative, residential, and public groups. Bivariate Moran’s I (I = –0.0621, p = 0.498) indicated no significant spatial correlation between population density and heritage distribution. The study recommends adopting circular tourism strategies to reduce pressure, balance regional disparities, and promote sustainable heritage-based tourism development. Findings offer a basis for balanced heritage management and tourism development in Uzbekistan with comparable regions.

The social cost of ill health among the working-Age population in 2019 in Hungary

Introduction: We have quantified the healthy life years lost and the costs incurred in 2019 due to the poor health of the Hungarian population aged 30-64 from a societal perspective, but also from the perspective of several other social actors, calculating the indirect costs according to the human capital approach. Objective: The aim of our estimate is to shed light on the radically high losses that Hungary incurs year after year as a result of its inhabitants living significantly shorter and sicker lives than people in similar situations in other countries. Method: In the first part of the analysis, we aggregated the time lost due to illness and disability for the age group 30-64 in 2019. The aggregated Hungarian values for the studied age group were compared with the corresponding values for the Visegrad countries, Austria and the European Union. The second part of the analysis aggregates the social costs of time spent in ill health. A distinction is made between direct costs, which involve the movement of money, and indirect costs, which are embodied in lost income or production. Results: In Hungary, the nearly 4.8 million people aged 30-64 spent a total of 654,000 years on sick leave in 2019, which equated to an average of about 50 days per person. This means 14% of the total number of working days could have been working days in good health. The direct costs, i.e., the expenditure of the Health Insurance Fund and the expenditure financed by patients and voluntary insurance, amounted to HUF 1,446 billion. Indirect costs, i.e., expenditure due to the loss of working years as a result of premature death and illness, represented a further burden of HUF 2,279 billion. Conclusion: In 2019, the direct and indirect expenditure of people aged 30-64 amounted to HUF 3425 billion, or 7.21% of the GDP. It is well known that in developed countries, including Hungary, the greatest health losses are caused by non-communicable chronic diseases, which can be prevented by a healthy lifestyle. Therefore, the promotion of healthy lifestyles and the creation of a conducive physical and social environment are essential for improving the country s competitiveness.

Effects of Cognitive Biases and Their Fuzzy Measure During Freight Transportation

Cognitive biases affect all aspects of our lives, including the decision-making process related to the routing of freight transport. In the process of using human-machine systems, people upload rational and objective algorithms in order to obtain the best possible results in the route planning process. Nevertheless, during the route choice process, human reasoning, based on experience and assumptions, overrides the choice of the machine, that is, cognitive biases appear in the decision-making processes. For this reason, we investigate how an objective system of interests becomes a cognitive bias during the process of making decisions related to the route choice of freight transport by motor vehicle. Furthermore, we present a methodology to estimate fuzzy measures of route-related deviations concerning time and distance, which may be indicative of the emergence of cognitive biases.

Running-Induced Fatigue Exacerbates Anteromedial ACL Bundle Stress in Females with Genu Valgum: A Biomechanical Comparison with Healthy Controls

Genu valgum (GV) is a common lower limb deformity that may increase the risk of anterior cruciate ligament (ACL) injury. This study used OpenSim musculoskeletal modeling and kinematic analysis to investigate the mechanical responses of the ACL under fatigue in females with GV. Eight females with GV and eight healthy controls completed a running-induced fatigue protocol. Lower limb kinematic and kinetic data were collected and used to simulate stress and strain in the anteromedial ACL (A–ACL) and posterolateral ACL (P–ACL) bundles, as well as peak joint angles and knee joint stiffness. The results showed a significant interaction effect between group and fatigue condition on A–ACL stress. In the GV group, A–ACL stress was significantly higher than in the healthy group both before and after fatigue (p < 0.001) and further increased following fatigue (p < 0.001). In the pre-fatigued state, A–ACL strain was significantly higher during the late stance phase in the GV group (p = 0.036), while P–ACL strain significantly decreased post-fatigue (p = 0.005). Additionally, post-fatigue peak hip extension and knee flexion angles, as well as pre-fatigue knee abduction angles, showed significant differences between groups. Fatigue also led to substantial changes in knee flexion, adduction, abduction, and hip/knee external rotation angles within the GV group. Notably, knee joint stiffness in this group was significantly lower than in controls and decreased further post-fatigue. These findings suggest that the structural characteristics of GV, combined with exercise-induced fatigue, exacerbate A–ACL loading and compromise knee joint stability, indicating a higher risk of ACL injury in fatigued females with GV.

Diversity is a key component of sustainable development. This stems from the systems theory approach, as a diverse system adapts best to environmental change. From this perspective, diversity is a guarantee of survival, and it serves as a tool of fighting for food security. The complexity and diversity must therefore be protected. One endpoint of diversity is biological and genetic diversity, while the other endpoint is cultural diversity. The protection of biological diversity is linked to the protection of genetic resources. The issues of the protectability of genetic resources is a new direction in intellectual property law, with the declared aim of promoting aspects of sustainable development. There are new, emerging legal institutions at international level which are not yet part of the universal system of intellectual property rights and it is up to international legislation to make them so. A key step was the adoption of the WIPO Treaty in this field in May of 2024. The purpose of this paper is to analyze the current and future possibilities for protection.

Obstacles to Finding the Ideal Workplace: A Gender-Based Analysis Across the V4 Countries

This study explores gender-specific barriers to finding an ideal workplace in the Visegrád countries (Czech Republic, Hungary, Poland, and Slovakia), where similar historical and socioeconomic contexts shape labor market inequalities. Based on the relevant literature, women are disproportionately affected by challenges related to language proficiency, professional networks, and mobility. The research applied a quantitative methodology, including chi-square tests, multiple logistic regression, and cluster analysis, using SPSS Statistics software to analyze the survey data. Findings revealed significant gender disparities. Women report greater difficulties with language and mobility, particularly in Hungary and Slovakia, whereas men benefit more from strong professional connections. The cluster analysis identified three respondent groups: those hindered by language barriers, those with weak networks, and those facing limited mobility. International experience mitigates language challenges, and robust networks ease job search difficulties. In line with the ideals of a circular society, this study also explores how circularity, inclusiveness, and collaboration can help break down gender-based barriers in the labor market. The study’s novelty lies in its comparative regional focus and the integration of statistical methods to segment job-seeker profiles. These insights highlight the need for targeted policies that enhance language skills and foster professional networking opportunities, especially for women. By addressing these barriers, policymakers can better support gender equality in labor market access across Central Europe.
